This recipe was doing the rounds on the internet during one of the lockdowns last year and it's been on the to-do list ever since.
It's total comfort food, and despite (or perhaps because of!) it's minimal ingredients it is super tasty and fresh. Delicious eaten warm straight out of the oven, but also great eaten cold the next day.
Ingredients:
- block of feta cheese
- cherry tomatoes
- basil
- olive oil
Method:
- Bung it all into a baking tray, and put in the oven for 30/40 minutes on gas 6/200c/fan 180c
- Whilst cooking boil up your pasta of choice; we used our pleasing chunky tubes of Tortiglioni
- Once all cooked, remove the cheese/tomato mix from the oven and stir in the pasta.
We served ours with a handful of Lane Close leaves, and homemade garlic bread utilising Peter Cooks Bread baguette and our smoked garlic. YUM!
